Not much time to cook these days, but when we are in Civitella and Liam is looked after by grandma, mamma can experiment!

My chocolate mini tarts

I rarely have time to cook during the week, so I try to cook something special every weekend.

I love cooking: it is very relaxing for me. It is not very easy to prepare more elaborate things these days, because Liam has found his feet and wants to walk everywhere all the time but he is yet not capable of doing that unassisted. Therefore, unless someone is looking after him when mamma is in the kitchen, there is not much space for creativity…

The other day I tried a little experiment. I wanted to prepare something to serve with tea for when auntie and the cousins would come over to see us and, given the ingredients I had in the house, I came up with these chocolate mini tarts!

Ingredients for 12 mini tarts:

  • 3 eggs
  • 90 gr of sugar
  • 50 gr of butter
  • 40 gr of dark chocolate
  • 2tsp of baking powder
  • 50 gr of almond flour
  • 40gr of all purpose flour
  • 60 gr of cocoa powder
  • half a glass of milk

Melt butter and chocolate on very low heat. Beat eggs with sugar and add melted butter and chocolate. Add the baking powder, then the almond flour and mix well. Add the flour and then the cocoa. If the mix is too dense, add some milk.

Preheat the oven to 180°C (350°F) and grease two muffin tins with butter and then pour some flour on it to keep the mini tarts from sticking while cooking. Distribute the mix into the holes and bake for 15-20 minutes checking with a tooth pick to make sure that they are well cooked inside.

Take out of the oven and let cool before taking the mini tarts out of the tin and sprinkling them with confectioner’s sugar.

I think some orange peel would really go well with the mix in this recipe. Also, some nice whipped cream would be a lovely topping. Or, alternatively, a nice sauce made with orange peel caramelized in sugar and cointreau. Next time!
